I have too late discovered this topic (blame the accursed site redesign I am still not familiar with), but I guess I can shed some light on the new professions. Hopefully Sedy won't punish me too hard for doing so.

I'd like, however, to correct Darcel right away - some classes' names are changed (though it is up to Sedy to decide whether he likes the new names or not).
Now to more detail, replying in descending order...
----------------------------------------------
Evasion-tanking - sadly, no, it's not going to happen. Unless you're talking about mail classes, the newly revamped tanks tank with their defenses, absorption and HP still.
(Real men do not fear being hit!
)
They received some assistance to it: as you can see on the Templar's class preview, his tanking is now assisted with
damage absorption shields. This greatly reduces/nullifies single targets' damage by a large amount, thus making boss tanking immensely easier for them. They, however, suffer in multi-target tanking (as the shields/ charges fly off like the wind).
The Myrmidon (Guardian) is still undergoing changes, but it's safe to assume he is way better suited to tanking multiple targets...suffice to say his 'way' has something to do with damage reflection.

----------------------------------------------
I already replied to Purejester and I will repeat myself - attacks' damage can
ONLY be set by Phys./Magic attack values of the user. It is hardcoded in the Iris' engine; changing it would be lots and lots of code rewriting. Spare the poor Sedy.

----------------------------------------------
Armor Destruction 3 still only reduces Physical defenses (albeit by larger amounts) - it is not Templars' work to shatter Magic defenses. There are...some other classes for that.

----------------------------------------------
Champions (Berserkers) are undergoing severe changes in gameplay by now - the present problems are not yet entirely resolved. Once I know for sure, I will indeed reply. Sorry.
---------------------------------------------
Starfall: First of all, Crusaders' CD recharge will most likely be done. There is no reason why they wouldn't get one (in the end, even Champions do).
Wizards will get their ITD indeed, along with something more.

Legionnaires (Mercenaries) are currently somewhat in-dev as well, so I can't 100% sure say anything about them.
High Priests are tweaked and their healing way is changed to fix the problem of Dmg.Abs. buff absence. Don't worry.

And yes, previously unpopular classes WILL see light again. I 100% guarantee that.

--------------------------------------------
Wizards: I guess I will need to elaborate a bit here. Hopefully I don't spill too much. D:
The new Wizards are primarily meant to be crowd-controllers. They will get a hellish load of immoblilizes, stuns, slows, w/e else you can imagine. Plus some new neat mechanics atop that. Moreover, most of their spells are AoE (albeit with varying zones) to help them defend themselves. They are STILL weak if cornered, however, so Magicians out there would want their targets to actually not come into attack range altogether (talking about melees here), and they're now indeed capable of doing so. Leave close-medium range combat to Sorcerers (Warlocks)...but I'm carried off.

All in all, stay tuned! Sedy will eventually provide more information and I will answer as much as I can, as well.

------------------------------------------
That's about it. If you have any other questions, feel free to ask them here, but be warned that
this is not 100% proven information! Sedy is the boss here and I am not - it's up to him to decide the new jobs' fates.
(I merely speak from the point of their original creator.
